Description
To provide learners with a knowledge of the chemical, physical and
microbiological basis of food products and their processing and storage.
Range of Variables
This module can be delivered on or off-the-job.

Ideally, full-time learners should study the module over a semester period to
ensure adequate time for skill acquisition and intermodule reinforcement. As
this module has a significant laboratory component (at least 20 hours),
delivery strategies must ensure an integration of laboratory and cognitive
skills.

Where delivery is by block release, learners will require access to open
learning materials covering all relevant knowledge before performing the
relevant practical work.
