This unit describes the skills and knowledge required to inspect wild, field-shot game meat during processing.This unit is only applicable to those inspecting wild, field-shot game carcases in a processing plant.No occupational licensing, legislative or certification requirements are know to apply to this unit at the time of publication.

1. Describe wild game meat classification requirements
  • 1.1 Identify animal habitat in accordance with workplace requirements
  • 1.2 Identify and classify wild game meat in accordance with workplace and regulatory requirements
2. Identify distinguishing characteristics and features of game animals
  • 2.1 Identify differences between game and non-game species
  • 2.2 Identify structure, location and function of varying body systems
  • 2.3 Identify organoleptic or sensory differences between game and non-game animals
3. Inspect wild game meat
  • 3.1 Inspect wild game meat in accordance with regulatory, hygiene and sanitation, and workplace health and safety requirements
  • 3.2 Detect and identify abnormalities in wild game meat
  • 3.3 Identify major diseases and defects of game
  • 3.4 Inspect carcase parts and organs in accordance with workplace and regulatory requirements
  • 3.5 Make dispositions according to regulatory and workplace requirements
