Description
This unit describes the skills and knowledge required to recognise common diseases and conditions in food animals, in order to determine if meat is safe for human and/or pet consumption. This unit applies to individuals who undertake work related to meat safety inspections of food animals. All work must be carried out to comply with workplace procedures, according to state/territory health and safety, food and meat safety regulations, legislation and standards that apply to the workplace.Individuals who work as meat inspectors must comply with the requirements of local/state/territory authorities, and where applicable the Australian Government export Authority. Users must check with the relevant regulatory authority before delivery.

1. Identify the nature, signs and causes of common abnormalities and diseases in food animals
  • 1.1 Identify the nature and causes of physical abnormalities in food animal
  • 1.2 Identify the nature, signs and causes of inflammation in food animal
  • 1.3 Identify the nature and causes of tumours
  • 1.4 Identify the ways in which food animals can be poisoned, and the signs of poisoning
  • 1.5 Identify key characteristics of common microbiological diseases found in food animals
2. Identify the effects of parasites on food animals
  • 2.1 Identify the effects of parasite on food animals
  • 2.2 Identify the relationship the parasite has to the host animal
  • 2.3 Recognise common internal parasites
  • 2.4 Identify the nature, life cycle and signs of internal parasites in food animals
  • 2.5 Identify the nature, life cycle and signs of external parasites in food animals
3. Apply knowledge of animal diseases and conditions to the interpretation of ante and post-mortem procedures
  • 3.1 Identify the common food animal diseases and conditions that may be identified during ante and post-mortem inspection of major species, as specified in the relevant Australian Standard
  • 3.2 Identify common abnormalities that may impact on food safety and wholesomeness of meat
  • 3.3 Identify how information about animal diseases and conditions is communicated to producer
