Description
On successful completion of this unit, participants should be able to:
- Oversee restaurant orientation, setup and preparation for service
- Demonstrate an understanding for the selection and implementation of complimentary food and beverage styles
- Manage staff , their positions and rosters
- Understand hospitality award requirements
- Demonstrate knowledge of Occupational Health and Safety within a bar and restaurant context
- Oversee Bar orientation and setup
- Demonstrate knowledge required for developing menus, cocktail menus and wine lists
- Demonstrate knowledge of basic drinks, cocktails, including non-alcoholic beverages
- Understand the responsibilities of supplying alcoholic beverage in a commercial environment
