Description
To equip the student with a knowledge of the
chemical composition and physical structure of
cereal grains, and a knowledge of the species and
varietal differences that make various grains
suitable for different end uses.
To equip the student with a knowledge of the
chemical aspects of grain processing.
NOTE: There is no chemistry pre-requisite to the study of Cereal
Chemistry. Consequently, it cannot be assumed that students have a prior
knowledge of chemistry. As a result, this course must remain descriptive in
terms of the chemical composition of cereals, and of the major chemical changes
that occur during the storage, analysis and processing of cereals.

of Malting and Brewing. Nutritive Value of Cereals. Oilseeds.
Each assignments is worth 5%.
