To provide students with basic waiting skills for
the service of food and beverages.

To enable the student to develop a knowledge in the
theory of food and beverage service in relation to:

- Different types of restaurants, organisation of staff,
service styles and procedures, basic control systems, personal attributes of
waiting staff, choice of equipment, basic knowledge of alcoholic and non
alcoholic beverages, different meal periods and service times.
